

Dorpers are a breed of lamb that was created in the 1930s. A cross between Dorset horn sheep lambs from Britain and Persian sheep from Iran, this variety of lamb was introduced to Australia in 19996. This was a hardy mix of lean meat characteristics (from the Persian breeds) marrying quick growth (from the Dorset breeds) that ended up with a lamb product that is perfect for Australian conditions.
Dorper lamb is preferred by the industry, as its high protein, good muscling and lower fat score produces lamb meat that is leaner and delicious. The sheep shed themselves, so shearing and mulesing is not needed, making for more humane conditions for the sheep.
Easy grazing fits the need for grass-fed, rather than grain-fed, production and grass-fed means superior taste according to experts (Kintzel, 2010). Dorpers have a different fat distribution to traditional lambs, and this give a taste preferred by butchers. The Dorper has proved that it can produce a carcass equal to the best in the world and is now sought out by abattoirs, the conventional lamb market and the certified organic market.” (Knights, 2010)

- Younger lambs: Our lambs range between 8-10 months old, allowing more tender and succulent offerings. We keep Dorpers with mothers longer as the abundant milk supply and natural rearing allows faster growth and health.
- Grass fed: The meat is leaner when grass fed, but lower overall fat. Retaining taste while reducing fat score.
- Aged (Hung) for minimum 10 days: Hanging meat extends and relaxes muscle fibres allowing more tender morsels of lamb. This process increases cost, so most meat you get isn’t hung. Authentiq Dorper is always aged to enable that premium meat on your table.
- Vacuum packed after hanging: Locking in all the flavour and taste right after hanging, allows no loss of quality from process to your kitchen.
